Minestrone Soup

Ingredients
4 cups chicken or veggie broth
2 cans stewed or petite diced tomatoes
1 large potato peeled and cubed
1 onion, chopped
1 can sweet corn, drained or 1 cup frozen corn
2 stalks celery, chopped
2 carrots, chopped
2 TBsp Italian seasoning
1 (15oz) can kidney beans, drained and rinsed
8 oz medium pasta shells or elbow macaroni
salt and pepper to taste

Directions:
1. In a large soup pot combine the broth, undrained tomatoes, potato, onion, celery, carrot, and Italian seasoning. Bring to a boil and reduce heat. Simmer for about 15 minutes.
2. Stir in the beans, corn and pasta. Simmer for 10-15 minutes until veggies are tender. Season with salt and pepper.

Tip: You can add diced zucchini at the same time as beans and corn. Using frozen tortellini is also very good in place of the other pasta.
