I used to make these for the missionaries once a week (pre-twins)... and they kept begging for more- so they must be good.
It is a bread machine recipe- so really, 'it's a set it and forget it' type of roll.... except when you need to put the filling in.
Dough:
1 1/4 Cup Water
3 T butter (room temp or softened)
3 Cups Flour
2 T Dry/Powdered Milk
3T Sugar
1 teaspoon Salt
2 teaspoons (or one package) Yeast
---------
Filling:
6 Tablespoons softened (not melted) butter
brown sugar and cinnamon
Directions:
Put all dough ingredients into the bread machine under dough cycle. If you don't have a bread machine- fear not- you can still make them.... it will just take a tiny bit more effort on your part.
- Mix dough ingredients together and let dough rise in a warm area for 45 minutes. Punch dough down and return it to warm area to rise for another 45 minutes.
After dough is done rising/out of the bread machine- spray a surface (counter top/table)with a non-stick spray and roll out (9x13-ish). Layer dough with room temp butter. (If you use melted butter then your rolls will be a soggy mess- but room temp makes it great.) Sprinkle a layer of cinnamon over butter and a thick-ish layer of brown sugar over the cinnamon.
Roll dough into a log.
Cut into 12 rolls.
(I've found the easiest way is to divide log in 1/2- then divide those 1/2's into 1/2- then those 1/2's into 1/3. Does that make since?..... If I try to eyeball it and just wing cutting 12, I get 4 massive rolls and 8 weakling rolls. haha!)
Place rolls into a 9x13 pan- sprayed with non-stick spray- and let rise for 30 minutes.
(don't let the rolls rise in a warm oven. It will melt the butter and make for soggy cinnamon rolls.... )
Bake at 350 for 15-20 minutes, until golden brown.
Top with a fluffy cream cheese frosting or a glaze.
Eat.
Enjoy.
Cream cheese frosting recipe:
1 8oz brick of cream cheese (room temp)
2-3 cups powdered sugar
1 tsp vanilla
Place cream cheese in a blender and beat until fluffy-ish. Add powdered sugar and vanilla. If too thick- add a cap full of milk, if it's too thin- add more powdered sugar.
-------------------------------------
Glaze recipe:
2 tablespoons melted butter
2 teaspoons vanilla
1- 1 1/2 cup powdered sugar
a cap full of milk
Mix melted butter and vanilla- add powdered sugar- and milk.
Pour glaze over warm rolls.
*Our family likes them both ways. Chip says the glaze is a little like a glaze on doughnut so when he's in that mood, we go the doughnut/cinnamon roll route. :)
Matt likes it with that laundry fresh taste! ;-)
